Springfield Wholeberry Cabernet Sauvignon 2009
wine; In the time of our ancestors grapes were harvdested by hand, carried to the cellar in baskets and placed uncrushed into open tanks to ferment with natural (wild) years into wine. This lost tradition has been re-enacted to produce Springfield Whole Berry. Whole berry maceration is followed by fermantation. No pumps, no crushers and matured in oak barrels for one year The result is a velvety wine with softer tannins and classical varietal characteristics. It is unfiltered and unfined so a deposit may result which might require decanting.
