Manzanilla can only be produced in Sanlucar de Barrameda where the unique microclimate allows a special yeast, the flor, to grow on the surface of the maturing wine all year round protecting it from the detrimental effects of oxygen. Elsewhere the flor tends to die off in the mid winter and summer to form Fino sherry instead. It is the lightest and driest of the sherry family and has an unique freshness.
