Left untouched for years the exact age of this sherry is uncertain but certainly dates back well into the colonial era. Manzanilla can only be produced in Sanlucar de Barrameda where the unique microclimate allows a special yeast, the flor, to grow on the surface of the maturing wine all year round protecting it from the detrimental effects of oxygen.
